Well the weekend is almost here and what better way to celebrate than a new recipe to get you drooling all over the sofa. This recipe is courtesy of Benjy (@theblackbomber) and I also have to thank Ama for the photograph and more importantly the sample he sent me in my Christmas card, it was delicious.
Cheese & Cranberry Biscuits
(makes approx. 30 medium size biscuits)
300g plain flour
60ml olive oil
200g grated cheese mix of cheddar & parmesan
25g cranberries chopped
1 egg for glazing
Preheat oven to 180c/Gas mark 4
Place all ingredients except water and egg in a large bowl & mix well, gradually adding water until the dough sticks together into a ball. Turn out onto a floured work surface & knead until smooth, roll out gently with a floured rolling pin until the dough is about 1\4 – 1\2 inch thick
Cut with a cookie cutter & place on the baking tray, glaze with beaten egg.
Cook for 35-40 mins or until browned.
